Saison

Saison translates to ‘Season” which is a very important thing to consider when you have temperature control is a luxury as most breweries located in farmhouses cannot afford. As a result many farmhouse strains of yeast are happy to ferment beer at unreasonably warm temperatures.

The farmhouse ale yeast strain we use is happiest when it is allowed to undergo free rise fermentation. The yeast was originally used in farmhouses with no temperature control and the strain evolved and throws many different flavor compounds at an accelerated rate with the added heat. The primary yeast flavor to note from this yeast is reminiscent of juicy fruit gum. The heat generated during fermentation raises the fermenting beer's temperature from 23-25 dC (74-77dF) to around 32 dC (90 dF) over the course of the typical 10 day fermentation.
