Our first ever doppelbock lager (how is that possible?) features a wall of richness built out of bricks of sweet malt and mortar of rosy booze mixed with dark stone fruits. Step mashing creates a lager that is simultaneously full, boozy, and smooth, requiring care while consuming lest you find yourself fainted with hooves in the air.
Secret Techniques
Step mashing is a brewing technique where hot water is blended with crushed malted barley to activate natural enzymes in the malt to break down starches and then the temperature is raised (or less commonly lowered) to change the sugar composition of the wort. We rest this mash at the highest temperature for these enzymes to promote glycoprotein formation to aid in foam retention and palate-fulness.
