Secret Techniques

Step mashing is the technique where malted barely is mixed with water to optimize certain natural enzymes within the malt to break down starches and then the temperature of the mash is raised (or less commonly lowered) to optimize other enzymes to change the sugar concentration of the wort. For our doppelbock, we raised the mash to a higher temperature to encourage glycoprotein formation to enhance foam and mouthfeel.
