Summer fields of honeysuckle, chamomile tea, and white peach create a tableau vivant for an ephemeral trumpet of nectarine-like acidity. Vivid pageantry of lychee, sugar cane, and tangerine flies hither and yon like songbirds in the brush. None try to conquer; all fit in their place beholden to a structure beyond us. A beautiful moment in time. Memento mori.

SECRET BARREL

In use since 1999, pH1 is one of the original barrels Peter Bouckaert used to make La Folie. A seminal beer bringing the centruries-old traditions and techniques of wild fermentation from Belgium to the United States. Since its initial fill, this barrel has been traded, lost, forgotten, and refound. It serves now as a muse - spending time with us and igniting the imagination as it has at New Belgium, Russian River, Rare Barrel, Purpose, and Side Project before. After us, it will pass along to the next brewery pushing forward the art of wild and mixed fermentation beers in the New World. We are immeasurably proud to be part of the lineage and have nothing but wide eyed fascination for what it will inspire next.
