Hops contain a variety of volatile essential hop oils and some are very volatile, especially myrcene. Adding hops to the hot side of the brewing process will ultimately lead to a lower level of these hop components. But by adding them to a fermenting vessel after fermentation is complete, these essential hop oils diffuse into the beer at a much higher rate. Overdone, the beer will taste like a freshly cut lawn.
