TASTING NOTES

Peruvian purple corn added to the mash creates a stunning scarlet color with pink hued foam and rich cereal aromatics. The wort (which starts purple) lightens significantly during a lactic acid fermentation creating notes of citrus bitters and bright acid berry character without producing ethanol. An addition of South American pink peppercorns further contribute to the brew's ripe raspberry and pepper tea qualities.

SECRET INGREDIENTS

Purple Corn is considered a superfood due to its high levels of phenolics and anthocyanins, which are plant chemicals that reside in deeply purple, red or blue-pigmented plants. It has been shown that plants rich in anthocyanins also have among the highest antioxidant activity. Purple Corn boasts higher antioxidant levels than blueberries, another naturally occurring purple superfood.
