TASTING NOTES

To celebrate our sustainability investments and efforts over the last 12 years, we brewed up a Belgian Blonde Ale with several unique twists. Up front the Belgian yeast crafts peppercorn character with a melon tray of cantaloupe, tangerine, and candied lemon. Unique notes of earthy, morning dew and sunflower seeds connect our rustic agrarian past with our modern sustainable future.

SECRET SUSTAINABILITY EFFORTS

We have invested in several sustainability initiatives throughout the years and have decided to add a few more with Beer for the Future. But the most sustainable part of our business is the fact that we are a local company, producing products you love in your city and the distance our product travels from our production space to the shelf or glass in only a few miles.

NEW INITIATIVE - Brewing with Kerza® Grain - A relative of wheat and leading regenerative crop, Kernza® represents tangible action on climate change. Kernza’s® extensive root system reaches over 10 feet underground and is a net sink for atmospheric carbon. Research shows that perennial grains like Kernza® are one of the most robust and effective solutions to sequester carbon on our productive lands.

NEW INITIATIVE - Packaging Beer for the Future with compostable Eco-Rings. These new beer carrier rings are commercially compostable and replace the plastic Paktech carriers.

NEW INITIATIVE - Selection of hops with low CO2 emissions due to nutrient use efficiency, high yields and disease resistance through Hopsteiner’s Sustainability Program.

SINCE 2024 - Repurposing Paktech plastic carriers returned from customers at the taproom to alt_ for up-cycling into new products.

SINCE MARCH 2023 - Composting spent grain and other compostables with WasteNot Compost. In the first two years of working with WasteNot Compost, we have been able to divert over 500,000 pounds of waste from landfills.

SINCE NOVEMBER 2022 - Switching from labeled cans to direct printed cans from Hart Print. This eliminated the use of plastic backing from the labels and makes our cans 100% recyclable. Additionally Hart Print is located in Carrol Stream, IL allowing us to pick up out own cans and reduce the transit footprint.

SINCE DECEMBER 2021 - Recovering and using Fermentation carbon dioxide with investment in a CiCi system from Earthly Labs which reduces our need for purchased carbon dioxide.

SINCE 2017 - SouthTek Systems Nitrogen Generator creates nitrogen process gas in house and removes purchased carbon dioxide from many of our processes.
