TASTING NOTES

The challenge was to make a beer that adheres to natural brewing processes, avoids a watered down flavor, has a truly sessionable alcohol content, and keeps the in calories low (76 calories for a 12 oz serving). So we put our brewing acumen to the test and were pleased with the resulting beer that showcases a moderate cereal grain base with notes of mineral water. While warm fermentation with a saison yeast creates notes of white grape juice and gentle floral hop flavors with notes of orange flesh and grapefruit. The beer finishes dry but bright with a hint of acidity giving this light beer enough backbone to hold up to most meals. One thing is for certain, Beer for Lightweights is not your typical light beer.

SECRET TECHNIQUES

No-sparge brewing plays a key role in the flavor profile of Beer for Lightweights. Unlike most beers which use a continuous sparging process (adding hot water to the mash bed to extract as much sugar from the grain), Beer for Lightweights wort is run off into the kettle and diluted with water and lactobacillus soured beer to hit the proper sugar content. Although the process reduces mash efficiency, it creates a clean cereal grain base minimizing the polyphenol content from the mash avoiding an astringent finish to the final beer.
