TASTING NOTES

Blend of 51% Barolo foedre aged wild and and 49% Sangiovese grape must fermented in an imported Italian Sangiovese wine puncheon

Initial aromas of stewed strawberry jam, pomegranate molasses, and black cherry juice reduced to near tar give prelude and hint to the deep, rumbling, sanguine acidity that emerges like a vicious beast rising from the inky blackness of still seas. A fabled thing with teeth. Minimalist carbonation leaves a long and flitting interplay on the palate between blood red fruits, supple leather, tannic black tea, and arias of candy-like pops of freeze-dried blackberries. Something to linger over while pondering cantos illustrating the high terrors and peaks of grace of an eternal existence

SECRET NAME

Named for Beatrice, an angel who guides Dante’s through the nine spheres of ‘Paradiso’ to the ends of physical existence in the Divine Comedy before rejoining the rest of the angels to dance like bees around a giant rose. We started with an imported Italian Sangiovese wine puncheon, we added crushed Sangiovese wine must and topped with mature wild ale from one of our Barolo foedres to let loose a melange of native and wild yeasts like Trajan’s armies. The result isn’t quite beer, but also not quite natural wine. As Dante posits, like all of us it exists in the middle searching for guidance as we await an expansive unknown.
