TASTING NOTES

Brewed annually for Green City Farmers Market, we departed from our usual strawberry extravaganza and instead opted for fresh Apricots grown by Seedling Farms.   Echoing Cantillon’s classic ratio, we rested 330 pounds of apricots in a blend of highly acidic wild ale in wine barrels that were left to sleep for over two years tempered with a touch of fresh saison. The apricots lend a unique acidity with a potent pop of summertime juice. Bright chords of honey and meadow flowers overlay light, toasted malts that play base for the vibrant fruit- and fermentation-based acidity. The finish is dry with a dose of American oak for structure leaving one reminded of vanilla, cracked black pepper, fruit leather, and late spring naps.
